Healthier Angel Food Cake

Ingredients:
1 cup all-purpose flour, sifted
1/4 cup cornstarch
1/2 tsp. kosher salt
12 egg whites, at room temperature
1 tsp. cream of tartar
1 1/2 cups Monkfruit sweetner (1:1 sugar sub)
1 tsp. pure vanilla extract
1/2 tsp. almond extract
Directions:
Preheat oven to 350°. In a large bowl, sift together flour, cornstarch, and salt.
In another large bowl beat egg whites and cream of tartar until soft peaks form, then gradually add sugar until stiff peaks form.
Gently fold in half the dry mixture until fully combined, then fold in remaining dry mixture until just combined. Fold in extracts. Be careful not to deflate egg whites!
Pour batter into prepared pan and bake until a toothpick inserted into the middle comes out clean, 35 to 40 minutes. Let cool 15 minutes then remove from pan and let cool completely.
