Breakfast Burritos

Ingredients:
6 low cal tortillas (I use La Banderita)
3 frozen hashbrown patties or 24 tater tot rounds
6 eggs
1/4 cup shredded cheese
3 TBS crumbled bacon or bacon bits
2 turkey sausage patties (cut up)
Hot Sauce
Salsa
Directions:
Crack eggs into a mixing bowl and whisk vigorously to incorporate a little air into the eggs.
Heat a nonstick pan on medium low
In your microwave, heat the turkey sausage patties according to the package directions then dice or slice and divide into 6 portions
Spray pan lightly with nonstick spray then add eggs
Cook eggs slowly, if you smell the eggs cooking, your heat is too high
Gradually start turning the eggs over with a spatula until the eggs are just cooked
Divide eggs into 6 even portions
Cook hashbrowns (or tater tot rounds, if using) in an air fryer at 400 degrees for 10 minutes or until just crispy.
Cut hashbrown patties in half and lay a half on each of the tortillas or add 4 tater tot rounds to each tortilla
Add one portion of eggs to each tortilla
Add one portion of sausage to each tortilla
Add 1/2 TBS of crumbled bacon to each tortilla
Finish with a drizzle of hot sauce then tuck the sides of the tortilla and roll tightly and serve with a side of salsa
