Healthier Egg Fried Rice

Ingredients:


1 tbsp avocado or olive oil, divided

3 large eggs, lightly beaten

1/2 tsp garlic powder

3 cups cooked, chilled rice (brown rice is recommended for more fiber)

3 tbsp low-sodium soy sauce or tamari

1/4 cup sliced green onions (scallions), for garnish

Sesame seeds

Salt and black pepper to taste 




Directions:


  1. Scramble the eggs

  2. Add a half a tablespoon of oil in a large non-stick skillet or non-stick wok over high heat.

  3. Add cold rice and begin breaking up the rice and moving it around constantly

  4. After 3-5 minutes of cooking the rice, move the rice to one side of the pan and eggs to the empty space. Move around immediately and make sure the eggs don't burn.

  5. Once the eggs are just cooked, recombine with rice, add garlic powder, stir and turn the rice over constantly to prevent burning

  6. Add soy sauce and keep stirring and turning the rice

  7. Salt and pepper to taste

  8. Serve: Garnish with fresh green onions and sesame seeds and serve immediately.
